Instructions
- Prepare Ingredients & Equipment: Organize your workspace, gather and measure all ingredients. Preheat your oven to 350°F (175°C) and grease the pan with vegan butter or oil, dusting with gluten-free flour or lining with parchment paper.
- Mix the Batter: In one bowl, whisk dry ingredients (flour, cocoa, baking powder, salt). In another, blend wet ingredients (almond kefir, flax eggs, melted butter). Gradually mix the dry into the wet ingredients until smooth, but thick.
- Bake the Cake: Pour batter into the pan, smooth the top, and bake at 350°F for 30-35 minutes, or until a toothpick comes out clean. Rotate the pan halfway through for even baking.
- Cool & Decorate: Cool the cake for 10 minutes in the pan, then transfer to a wire rack. Decorate with a vegan chocolate glaze, shredded coconut, powdered sugar, or fresh fruit.
- Serve: Serve with whipped coconut cream or dairy-free ice cream, and pair with tea or coffee. Slice and sprinkle extra coconut for an elegant presentation.
